Cold, at room temperature, a healthy one reads a little above 1,000 ohms, and the resistance climbs steadily as the cavity heats. A sensor that has drifted still reads plausibly at rest and lies badly at 400 F, which is exactly why the complaint is usually described as *the oven used to be fine*. We log the cavity with an independent probe through a complete preheat and at least two cycling periods. That distinguishes three different faults that all present as bad baking: a sensor reading low, an element cycling short because a relay contact is pitted, and an oven that is actually accurate but sitting in a cabinet with a blocked vent path. Only the first two are parts. ## Self-clean is where wall ovens die Pyrolytic cleaning runs the cavity far above cooking temperature for hours. Cam hinges wear, but so do the anchoring screws in a cabinet that has moved with humidity. A blocked feed tube and a failed circulation pump produce a similar complaint and differ by an order of magnitude on the estimate, so we measure rather than infer. ## How we test rather than guess We pull the lower arm and the coarse filter, hold a light down the arm and count how many holes still show a clean beam. If the outer third is closed, the upper rack was never getting the pressure it needed, and no detergent change was ever going to fix it. Fill volume is timed against the cycle rather than eyeballed, because an over-fill and an under-fill cause different faults. Element resistance is read cold and the sheath inspected along its whole length — a pitted sheath is an earth-fault risk, not a wash problem, and it is a replacement rather than a clean. ## Drainage and leaks Standing water at the end of a cycle is a drain-path question with a short list: the drain pump, the check valve, the disposer knockout plug that was never punched out at installation, and the height of the drain hose loop. That last one is the most common in a kitchen that has been remodelled — a hose that runs flat from the machine to the cabinet wall will let sink water back up into the sump, and nothing inside the dishwasher is at fault. We run the machine with the toe panel off and watch, because a leak diagnosed by inference tends to come back. ## Doors, springs and the way they drop A door that falls open instead of holding halfway is a balance fault, and the balance is carried by a spring, a cable and a pulley on each side. Cables fray where they turn, and a pulley that has seized will chew a cable through in a season. We replace them as a pair even when only one has gone, because the survivor has done the same number of cycles under the same load and will follow within months. The same fault also explains complaints that sound unrelated. A high-output hood cannot exhaust air the house cannot replace. Residential code requires a makeup-air provision once a hood is rated above 400 CFM, and a professional-grade hood over a professional range is comfortably past that. In a well-sealed newer house in SilverLeaf or Murabella, running the hood on high with everything shut simply pulls the house into negative pressure — the blower spins at full speed and moves a fraction of its rating. Crack an exterior door and the same hood suddenly works. That test costs nothing and tells us where the fault is not. ## Blowers Internal, inline and remote blowers fail differently. An internal blower puts its motor in the grease stream, so the wheel loads up unevenly and the whole hood vibrates; balance returns once the wheel is cleaned, and if it does not, the bearing has gone. An inline blower in the attic runs in a hot, humid space and its capacitor ages faster than the motor does — a unit that hums and will not start, or that only runs on one speed, is usually a capacitor before it is a motor. A remote roof-mounted blower on the coast has the hardest life of all. We test motor windings and capacitance rather than swapping the assembly on suspicion, because a remote blower is the most expensive part on the hood. ## Salt air and the backdraft damper The damper is a set of light aluminium flaps that open on airflow and fall shut when the blower stops. In 32080, 32084 and the beachside ZIPs, salt aerosol and condensed grease combine into a film that gums the pivots. Two failure modes follow. A damper stuck shut chokes the hood and the owner reports weak extraction with a healthy-sounding blower. A damper stuck open lets humid outside air fall straight down the duct into the kitchen — which is why the complaint sometimes arrives as *cold draught over the range* rather than as a ventilation problem at all. Roof caps and wall caps take the same beating. A cap whose screen has clogged with salt-crusted lint will strangle a perfectly good blower. ## Lighting and controls Lamp positions that die one at a time are usually holders rather than lamps — heat cycling above a range works the contacts loose. Touch controls that respond late are typically a board that has taken heat or a ribbon connector that has crept out of its seat. Both are cheap to test and expensive to guess at. ## The historic-kitchen problem In the 1900s-to-1930s kitchens downtown and in Davis Shores, hoods are usually retrofitted into a ceiling that has no straight path outside. A stainless tube sits directly in a chloride-rich, high-temperature environment, and once it perforates on the underside the flame pattern goes wrong before the hole is visible. We replace burners as a set when one has gone, because the others are the same age in the same air. ## Gas delivery before parts A grill that lights weakly on every burner at once is a supply problem, not five simultaneous burner failures. On a propane installation the most common cause is the excess-flow device in the tank valve. Opening the cylinder valve quickly with a burner valve already open trips it, and the grill then runs at a fraction of its gas rate no matter what you do at the knobs. Closing everything, waiting, and reopening the cylinder slowly with all burner knobs off resets it. It costs nothing to try before we come out. On natural gas, a weak flame across the whole appliance points to line sizing or a shared load — a grill teed off a run that also feeds a pool heater will starve when both call at once. We check static and working pressure at the appliance rather than assuming. Orifices are sized for one fuel. A grill converted between propane and natural gas without the correct orifice set will either soot heavily or lift its flames off the ports. We do not improvise conversions. ## Corrosion, specifically Salt aerosol does not need a wave. It carries inland on the prevailing wind and settles as a hygroscopic film that holds moisture against metal for hours after the surface looks dry. On a grill that means: - Fasteners seize, then snap on removal. We come prepared to drill and retap. - Electrode insulators crack and track to ground, so the spark jumps somewhere useless and the burner never lights. - Ignition modules and battery holders corrode internally. - Hood springs lose tension and the lid becomes a hazard. Rinsing the exterior and the cart interior with fresh water after a blow, and covering the grill when it is cold and dry rather than warm and damp, changes the service interval more than any product on a shelf. ## Seasonal reality The grill that will not start in October has usually been sitting since June with a cover on it in the wettest months of the year. Wasps and mud daubers block venturi tubes, which produces a flame that burns back inside the tube with a distinctive roar. It is also the only method that separates three faults that present identically. **Sensor drift.** The average sits consistently above or below the set point, and the swing is normal. In a built-in of this class the sensor is usually a 1,000-ohm platinum RTD: cold, at room temperature, a healthy one measures a little over 1,000 ohms, and resistance climbs with temperature. A drifted sensor often reads plausibly cold and lies badly hot, which is why a cold resistance check alone is not proof. **Weak or intermittent heat.** The average sits low and the recovery after each cut-off is slow. That is an element with a failing section, a gas valve not opening fully, or a relay contact that has pitted so the element is not getting full voltage every time it is called. **Air path.** The average and the swing both look reasonable and the food is still wrong. That points at convection — a fan not turning at speed, a baffle fouled, a blocked cavity vent — or at an installation without the clearance the appliance needs. ## Calibration is a last step, not a first one Most ovens allow a calibration offset. Applying one to an oven with a wide swing, a weak element or a blocked vent hides the symptom and guarantees the customer comes back.
